Vada Pav, invented by the street food vendors of Mumbai, is beloved by people across the country. Tangy, filling, and easy to munch on, vada pav is the perfect snack for Holi. Prepare a large batch before you head out and share it with your friends and family in the sunshine. We added a vibrant twist to the traditional vada pav by pairing it with our Mint Mayo and Peri Peri Ketchup for an extra dose of colour and flavour!

Ingredients to make Vada pav recipe:

2 potatoes
1 sprig of curry leaves
2 green chillies, chopped
1 tsp each - Salt, Turmeric, and Garam Masala
1 cup gram flour (besan)
½ cup water
Oil, for frying
Pav buns
Optional: fried onions

Steps to make Vada pav recipe:

1.
Boil the potatoes until they are tender, then mash them so no lumps remain.
2.
Mix the mashed potatoes with salt, green chillies, and spices. Roll the potato mixture into small balls, then flatten them slightly.
3.
Heat oil in a kadhai. If using fried onions, fry them at this time and set them aside.
4.
Combine gram flour, salt, and water to form a thick batter.
5.
Dip the potatoes in the batter so both sides are evenly coated.
6.
Deep fry the vadas until they are golden brown. Set aside to drain the excess oil.
7.
Slice the pav along the middle. On one side, spread Mint Mayo and on the other, Peri Peri Ketchup.
8.
Place a vada onto the bottom of the pav. Scatter fried onions and sandwich the vada pav together. Enjoy!
